Relished Out!

Sweet Cucumber & Zucchini Relishes

At long last I am finished the relishes for this year!!! Relish takes a minimum of 2 days to make, meaning I have to have 2 consecutive days available to get it done. The kids had school off today so we ground vegetables for 3 hours this morning. I had a pretty good cry doing the onions - it's a wonder I didn't cut myself because I couldn't see what I was doing with the knife through my tears.

So I must say that I 'relish' the joy that comes from being finished!
