Canning Early

This year I decided to beat the heat! I have so many berries and apples in the freezer that need to be used so I decided that I might just as well make jelly with them now while the temperatures are bearable. It takes me pretty near all day (though I get to do lots of things at the same time) to juice the fruit and then to cook it up into jelly. So far we've done apple cinnamon jelly and a cherry jelly which doesn't seem to want to set like it is supposed to and may end up being pancake syrup... Bonus!!!

Last week Myles went fishing and brought home 3 nice sized trout. We decided that rather than freezing them we would bottle them. So here they are... my first ever attempt at bottling fish!

The kids say they look disgusting, but as for me, I think they look like they are supposed to. We did 5 jars. It's pretty cool.

I love filling jars full of food for my family to enjoy. It is such a good feeling to be able to put up things we grow. I know that they are healthy for us, that there are no preservatives added and I also know how fresh they are. All very god things to know! There is a great feeling of well-being in activities that help and assist in providing for my family. What a joy to live in an age that I can do this.
